1 lbs boneless, skinless chicken breasts
6 cups of chicken broth
2 tablespoons olive oil
1 yellow onion, diced
2 jalapeños, seeded and diced
2 cloves of garlic, minced
1 (15.25 oz) can no salt added black beans, rinsed
1 bag frozen corn
1 (14 .5 ounce) no salt added can diced tomatoes
2 limes
1 tbsp dried cilantro
1 tbsp ground cumin
½ avocados
Fresh cilantro
8 no salt tortilla chips
1 oz Queso Fresco cheese
2 tbsp sour cream
Heat olive oil in a pan and sauté the onion and jalapeños until softened. Add in the garlic and cook until fragrant.
Add onions and jalapeño to a crock pot.
Add chicken broth, tomato, juice of lime, dried cilantro, dried cumin, beans, and corn to crock pot. Stir well.
Nestle chicken into crock pot and cook on high for 2 hours.
Remove chicken and shred or chop- whatever you prefer- and add it back into the crock pot.
Serve in a bowl with your favorite toppings!
