1 lbs ground turkey
4 tbsp Graza olive oil
2 cloves of garlic, minced
1 large red onion, sliced
1 zucchini, chopped
1 pint of cherry tomatoes
½ onion powder
½ tsp garlic powder
½ tsp Italian seasoning
¼ tsp pepper
1 cup dry quinoa
¼ cup Graza olive oil
2 lemons
2 tbsp fresh, chopped basil
Cook quinoa according to package directions. Set aside and keep warm.
Heat 2 tbsp of Graza olive oil in a large pan. Add ground turkey, onion powder, garlic powder, Italian seasoning, and black pepper. Cook, breaking the meat apart until it is browned and cooked through.
Heat remaining olive oil in a large pan, sauté garlic for 30 seconds, then add onions. Cook until they are soft.
Add zucchini and tomato’s and cook until tender.
Add a sprinkle of fresh basil and mix.
Serve turkey and vegetables over the quinoa.
Drizzle the bowl with the lemon, basil, oil mix and enjoy!
