¼ cup mayonnaise
¼ cup greek yogurt
¼ cup fresh basil chopped
1 lemon, juiced
1 garlic clove, minced
1 ½ cup plain panko bread crumbs
1 lbs skinless cod filet
1 large egg
2 green onions, chopped fine
Process, Greek yogurt, mayonnaise, basil, lemon juice, and garlic in a food processor to make an aioli sauce. Transfer to a bowl.
Cut cod into 1 inch pieces and divide into two batches. Put the first batch in the processor and finely mince. Take the next batch and coarsely chop.
Transfer the cod to a large bowl and add ¾ cup of panko, egg, green onion, and 3 tbsp of the aioli sauce.
Form the cod mixture into small cakes.
Place the remaining panko in a shallow dish and coat the cakes.
Spray with Graza olive oil spray and air fry at 390 degrees for 15-17 minutes until done.
Serve with the remaining aioli sauce and a green vegetable!
