1 lb ground chicken
1 small onion, chopped
2 garlic cloves, minced
¾ cup panko bread crumbs
1 tsp oregano
½ lemon, juiced
¼ tsp pepper
Remaining ½ lemon, juiced
1 cup Greek yogurt
½ tbsp, dried dill
1 garlic clove, minced
1 small cucumber, grated
Pita bread (try our low-sodium version!)
Cherry tomatoes, halved
Cucumbers, quartered
Onions, diced
Iceberg lettuce, shredded
Feta cheese (Optional)
Preheat the oven to 400°F.
In a food processor, combine the onion, garlic, ½ of the lemon juice, oregano, pepper, and panko, until a paste forms.
Remove the mixture from the food processor and gently fold into the ground chicken.
Divide the mixture into 12 equal portions. Roll each into a ball, then pat flat to form roughly 2-inch patties.
Bake in the oven for about 15 minutes or until each of the patties are cooked through.
While the meat bakes, prepare the sauce.
Combine the Greek yogurt, the remaining ½ of the lemon juice, dill, garlic, and cucumber, stirring until evenly mixed.
When the chicken patties are done, stuff them into your favorite pita bread.
Top with your favorite prepared toppings, drizzle with Tzatziki sauce and enjoy!
